Delectably Easy Dinner Recipes for Two

If you are planning to surprise your better half or a close friend by preparing a special dinner, here are some delicious and quick dinner recipes for two, that will help in making the evening perfect and memorable.
Whether it's Valentine's Day eve or just a simple date, a dinner for two should be a warm and cozy affair, that gives you enough scope to spend quality time with your partner or friend. Some basic guidelines for beginners to keep in mind are whatever meal you cook should appeal to the taste buds of your guest.
Along with this, creating a perfect ambiance for the dinner, especially if it's a romantic dinner, is equally important. Champagne, flowers and candles, soft background music, etc., will surely add a personal touch to the evening.
However, if you want to make the most out of the evening, make sure you are already done with the cooking well before your guest arrives.

Tuna Casserole

  • Macaroni: 2 cups
  • Tuna: 1 can
  • Garlic: ½ tsp
  • Onion: (chopped) 1
  • Margarine/butter: 2 tbsp
  • Campbell's Cream of Celery Soup: 1 can
  • Cream cheese: 1 small pack
  • Dry mustard: ½ tsp
  • Grape nuts: ¼ cup
  • Milk: ¼ cup
  • Green Peas: ½ cup
Method of Preparation
Cook the macaroni as per the instructions on the package and keep it aside. In a casserole dish, add cream of celery, softened cream cheese and milk, and mix well until smooth.
Next, add the tuna, garlic, dry mustard, onion and cooked macaroni, and stir well. Add grape nuts and green peas to the melted margarine and spread this mixture over the top of the casserole. Finally, bake the dish in a preheated oven at 375°F for 40 - 45 minutes, and serve.

Slow Cooker Ribs

  • Pork baby back ribs: 4 pounds
  • Brown sugar: ½ cup
  • Ketchup: 2 cups
  • Vinegar: 4 tbsp
  • Chili sauce: 1 cup
  • Hot sauce: 1 dash
  • Dried oregano: 2 tsp
  • Worcestershire sauce: 2 tsp
  • Salt and pepper: to taste
Method of Preparation
Season the ribs with salt and pepper. Put them in a shallow baking pan. Brown the ribs in a preheated oven for 15 minutes at 400°F. Now turn them over and brown the other side of the ribs for the same time, and drain the fat.
In a mixing bowl, combine the ketchup, chili sauce, brown sugar, vinegar, oregano, Worcestershire sauce, hot sauce, salt and pepper. Transfer the ribs to a slow cooker, pour the sauce over the ribs and coat them well. Cover and cook for 7-8 hours until the ribs are tender.

Blueberry Muffins

  • All-purpose flour: 3 cups
  • Unsalted butter, softened: 10 tbsp
  • Grated lemon peel: 1 tsp
  • Baking soda: ½ tsp
  • Blueberries: 1½ cups
  • Plain yogurt: 1½ cup
  • Sugar: 1 cup
  • Large eggs: 2
  • Baking powder: 1 tbsp
  • Salt: ½ tsp
  • Flour (if using defrosted frozen berries): 1 tbsp
Method of Preparation
Whisk the flour, baking powder, baking soda and salt together. Keep it aside. Mix butter and sugar together in another bowl until it gets fluffy. Add the eggs and beat well along with the grated lemon peel. Now add the dry ingredients and yogurt to the bowl and beat well.
Fold in the berries. If using frost berries, defrost them, remove the excess liquid and coat them in some flour. Take a muffin pan and coat each cup with oil or butter. Pour the muffin dough into each cup and bake in a preheated oven at 375°F for 30 minutes.
Insert a long toothpick into the center of the muffins to check whether they are baked or not, and if the toothpick comes out clean, it means the muffins are ready. Remove the muffins from the cups and serve warm.
